Project Positioning: Application Scenarios
Trehalose has a sweetness level equivalent to 45% of sucrose, characterized by a mild, pleasant sweetness, a clean and refreshing taste, and no aftertaste. It is also highly stable under heat and acidic conditions. As a non-reducing sugar, trehalose does not undergo browning (the Maillard reaction) even when heated in the presence of amino acids or proteins. Moreover, trehalose exhibits low hygroscopicity and remains non-hygroscopic even at relative humidities as high as 95%. In addition, trehalose possesses unique functions such as inhibiting starch retrogradation, preventing protein denaturation, and suppressing lipid oxidation, making it an excellent food ingredient that can be consumed directly or used as a food additive. Furthermore, due to its non-reducing nature arising from its distinctive disaccharide structure, trehalose can form a special protective film on cell surfaces under harsh conditions—including high temperature, extreme cold, and desiccation—thereby effectively safeguarding biomolecular structures from degradation. Consequently, it finds extensive applications across various industries, including biopharmaceuticals, pharmaceuticals, cosmetics, and agriculture.
