海藻糖是一种由两个葡萄糖分子经过a、a-1、1结合而成的非还原性糖。以淀粉为原料，通过生物酶转化将淀粉的还原性末端转变为海藻糖结构，再将海藻糖分离出来，成为含两个结晶水的结晶海藻糖。含两个结晶水的结晶海藻糖的分子式：C₁₂H₂₂O₁₁·2H₂O
